Lemon Ginger Lemonade

zest the citrus, then press the juice in a small saucepan. Add sugar, honey and water, and bring to a steady simmer. Simmer for 5 minutes, then steep for further 15m minute.

Pour through a fine mesh sieve and store in a bottle in the fridge.
