Beat yolks, sugar and cognac into a white foam, ~5-8 minutes, over tiny heat, or steam, let cool

Make coffee, let cool

Beat up cream almost stiff, add mascarpone, beat stiff, add yolk mix, incorporate slowly, then beat stiff again, cool

Assemble. You can do it.
