Soak gelatin in water until it turns into a gummy blob. About 15 minutes.

In the meantime, heat up cream, sugar and salt on the stove over medium heat. When it just starts to boil, turn off the heat. Mix in gelatin, buttermilk and vanilla. When everything's dissolved, pour into serving containers and let set overnight in the fridge.
