This is basically a pasta dough, so mix, cover, rest for 30 minutes, knead again for 2 minutes. Put in fridge and store for up to a week at this point.
Pour a little oil on work surface, plop down dough portion and roll out into a huge roundish lasagna sheet, spread creme freeche on it, cover with bacon and onions or whatever you want to put on it and bake at max temp for 2-15 minutes depending on what your max temp is.
